Çorum Breakfast

In Çorum, breakfast is not a slice of bread and tea; it is the most abundant meal of the day — a table lined with cheeses, butter, clotted cream, honey, tahini-molasses, jams and hot egg dishes. The city’s breakfast culture rests on the “serpme köy kahvaltısı” (spread-style village breakfast) tradition carried in from the villages: a little of everything, many varieties, mostly homemade.
The Core of the Table
A Çorum breakfast sets the following at the head of the table:
- Cheeses: Above all Kargı tulumu, white cheese and çökelek (curd cheese). The region’s dairying tradition determines the quality of the breakfast cheeses.
- Butter: Village butter is the table’s gold medal — spread over the hot dishes and the bread itself.
- Clotted cream, honey and tahini-molasses: The classic trio of the sweet side; tahini stirred with grape molasses is the energy source of winter mornings.
- Homemade jams and pervede: Autumn stores such as rosehip pervede and hawthorn molasses stay on the table all winter.
- Hot egg dishes: Egg salad, beans with egg and eggy bread form the table’s hot heart.
- Boiled: Boiled potatoes as the filling hot item.
- Hot soups: On winter mornings a hot soup such as oğmaç may open the table as well.
From Village to City
This table grew out of Çorum’s farming and herding daily life: before a morning in the fields, a filling meal that keeps you going for hours was essential. With urbanization the table moved into the city’s breakfast houses and municipal social facilities. Yöresel Çorum Mutfağı, the restaurant of Çorum Municipality’s subsidiary BELTUR, leads the establishments serving regional cuisine at restaurant scale; its menu includes local items such as eggs with green beans.
The Times of Breakfast
Çorum’s breakfast has its special occasions: weekend family tables, bayram mornings, wedding-day meals and the long, unhurried breakfasts of winter. The table is never rushed — tea is brewed, bread is freshly cut, the cheese tray is refilled. That slowness is what makes breakfast a daily gathering ritual.
How to Set the Table
For those setting a Çorum breakfast at home, a practical order:
- Cheese tray: Kargı tulumu, white cheese, çökelek
- Sweet side: clotted cream, honey, tahini-molasses, pervede and molasses
- Hot item: one of the egg dishes, or boiled potatoes
- Cool side: olives, tomatoes and cucumbers
- Bread: fresh village or tandır bread
- Tea: strong, in tulip-shaped glasses
