İskilip Baklava is a type of baklava unique to İskilip, traditionally prepared by local masters in five distinct shapes: gül (rose), döşeme, şıkırdım, gazete and bülbül yuvası (nightingale’s nest). Known during its application process as “İskilip Gül Baklavası,” the product received the official name İskilip Baklavası upon registration.

Geographical indication registration

İskilip Baklava was registered as a mark of origin with the Turkish Patent and Trademark Office on 28.08.2025, registration no. 1764, following an application filed by İskilip Municipality on 03.02.2023. With this registration, the number of İskilip’s geographically indicated products rose to eight, making it the district with the most geographical indications in Çorum province. The five shapes

The defining feature of İskilip’s baklava-making is that the same dough and filling can be rolled into different visual forms:

  • Gül (rose) — the classic shape, where the yufka is curled like a rose petal, giving the form its name.
  • Döşeme — the classic layered baklava form, with yufka sheets laid flat.
  • Şıkırdım — a distinctive rolled form with a thin, crisp texture.
  • Gazete (newspaper) — a form where the yufka is folded like a sheet of newspaper.
  • Bülbül yuvası (nightingale’s nest) — a small, nest-shaped roll where the filling shows through the centre.

How it’s made

As with other types of baklava, thinly rolled yufka sheets are layered with a filling of walnuts or pistachios, brushed with butter and finished with syrup. What sets İskilip’s version apart is that the dough is shaped into five distinct traditional forms, a rolling technique passed down from master to apprentice.

Cultural significance

The registration of İskilip Baklava formally documents the district’s pastry-making craftsmanship. Together with İskilip dolması, turşusu, sirke salatası, strawberries, tokmaklı kağnı, Ramadan keşkek and yırtma yemeği, İskilip Baklava is one of the district’s eight registered products.
